best. casserole. ever.

When we got married, one of the most amazing gifts I recieved was a wooden recipe box filled with recipes hand written by my mother's friend Jamie. Jamie is a former caterer and an amazing cook! Tonight I tried her recipe for Chicken-Broccoli Casserole- I figured it would be no big deal, just some casserole. But oh, no. It changed my life.

I think it's the curry powder that makes it magical.

I forgot to take a pic of the hot bubbly casserole dish... so here's a picture of the leftovers all packed up for my lunch tomorrow:



Chicken-Broccoli Casserole

2 cans cream of chicken soup
1/2 cup mayo
1/2 tsp curry powder
1 tbsp lemon juice
salt and pepper (to taste)
2 10 oz. packages frozen broccoli (I used chopped)
3 whole chicken breasts
1 cup grated cheddar cheese

Make sauce of soup, mayo, curry powder and salt & pepper. Cook broccoli slightly and drain. Boil chicken until done- cut up in large pieces. Layer pieces of chicken, broccoli and then sauce. Repeat. Top with grated cheese. Bake at 325* for 30-40 minutes or until bubbly.
